Greek Cooking: Spanakopita

I’ve been making spanakopita for years. I finally decided to make a video tutorial on it. This is the only way my kids will eat spinach. They love it! I know that you’re suppose to roll your own phyllo but I simply don’t have that much time. The whole thing took about an hour to make and about 40 minutes in the oven.

Ingredients:
2.5 lbs spinach, 5 green onions, 11oz feta cheese, 2 eggs, 2tbsp fresh parsley, 1 tbsp fresh dill, about 10 phyllo pastry sheets, half cup olive oil. Note: You don’t really need to add eggs if you don’t want to. It will still taste just fine.

FM Radio Station

So I’ve committed myself to this thing called Semanal. In addition to being a neat thing to do, it will also keep me motivated to make video’s throughout the year. It’s like when you start working out at the gym at the beginning of the year due to some New Year’s resolution. It’s always better if you work out with a friend to keep you motivated. I feel that everyone at Semanal is there to keep me motivated.

People think that broadcasting on the radio is really complicated and requires a lot of equipment. Well, as this video shows, the hardware part is easy. It’s the legal stuff that’s a pain in the ass. In some ways I hope all FM stations move to satellite. Maybe then (with the FM waves cleared) I can pull out this little transmitter again and have some fun.
